CHEESE CURDS

Before hard cheeses like cheddar are pressed into wheels or blocks and aged, they begin as curds.  Fresh cheese curds have a slightly rubbery texture and squeak on your teeth when you chew them.  Cheese curds are perfect alone as a snack, battered and deep fried, warmed in a pan and put on bread for perfect grilled cheese or mixed with gravy on french fries for classic poutine.
